Crock Pot Baked Potatoes from A Beach Cottage from last week’s meal plan. So yummy! We changed them slightly from the orginial (added bacon, no goats cheese, no cream) but they were still delicious. Plus an excellent and super easy way to bake potatoes!

Busy, busy week this week. So much fun stuff! I’m attending a book club at Better Read Than Dead on Saturday afternoon, and my sister, my niece, Lily and I are all attending the premiere of Disney’s new movie, Brave on Sunday. Fun!
My parents are staying on Wednesday night after looking after Lily while I’m at my Buddhism course (I’ve been thinking about writing a post about that but might wait until after the 7 weeks). Mum mentioned that she wanted to try the Beef Brew with Herb Dumplings that I’ve had the opportunity to trial. We are actually having it tonight but I have enough to make it again so will be making it for the family on Wednesday night.
Thursday is a busy day too. Mr Monkey has a doctor’s appointment in the morning to have his knee looked at again, I have another dentist appointment and then Mr Monkey has a dentist appointment. Appointment after appointment after appointment. Thankfully my Dad is spending the day with us (while Mum and Nan are at the Stitches & Craft Expo) and will be able to help look after Lily for us.
This week I have only bought a few fruit and vegetables, plus a few things from the supermarket. We may need to pick up a few veggies later in the week but shouldn’t need to buy any meat – which I feel is what is making our shopping trips so expensive lately. I’ve been trying to really cut back on buying stuff we don’t need, or don’t need right now to keep the weekly shopping down. I’ve also made sure to look at cheaper options for products we buy regularly and also cheaper in-season fruit and veggies. So the budget meal planning is going… ok. Could be better but for the moment it’s working. It definitely makes it harder to come up with interesting meal plans but I think I just need to get a bit more creative.
