A bit more of an adventurous meal plan this week, which I’m pretty proud of as we’re trying not to do much grocery shopping this week. It was also quite easy as we only have a few meals to cook this busy week.
Monday I am meeting up with some friends for drinks (yes, non-alcoholic in my case) so we are having a quick easy meal before I go. This Broccoli, Pine Nut and Chilli Penne is from the new issue of SBS’s Feast Magazine that I picked up from the supermarket the other day. Should be simple, tasty, vegetarian and best of all, using things we already have.
Another recipe from the magazine is the Pea & Bacon Soup. I’ve mentioned before that Pea soup is one of the only soups I will eat – the last few winters I’ve taken to making up a batch of my Pea Soup and freezing it for easy meals. This Pea & Bacon Soup looks even easier to make and bacon always makes things better.
Wednesday my dad is hopefully coming to babysit Lily while I go to the Buddhist Centre. Normally we’d just go out for dinner but I thought I should probably cook dinner every now and then. I was searching through the recipes on here to find one for my father-in-law and I came across Heston’s Spaghetti Carbonara and I just couldn’t pass it up! It really was one of the best pasta meals I’ve ever had and I can’t wait to make it again.
Thursday we are meeting my lovely Twitter friend Alyce and her husband and son for dinner in the city. They are traveling down from Brisbane and this will actually be the first time we’ve met in person! I’m so excited!
Friday we are catching up with Alyce again, as well as our friends Amy & Caitlyn and have plans to catch a ferry and go on an adventure in Manly. Should be fun! I believe we still have some of the lamb dippers in the freezer so I’ll just cook up some mash and vegetables to go with those.
Saturday Mr Monkey is having a “boys night” at his friend’s house so Lily and I are heading to his parents’ house for dinner and a sleep over. On Sunday my parents are picking us up and we’re heading up the coast for a 2 night holiday! We were hoping Mr Monkey would come with us but he has to come home on Monday for work and it’s a bit of a drive so he’d prefer to stay home.
So, busy week this week but I’m looking forward to some interesting meals!
