Busy week this week. Monday Lily has swimming – hopefully this week will be better than last week. I’ve been talking with her the last few days and she says she is going to go in the pool by herself, wear Daddy’s goggles and not cry in the water. Fingers crossed! After swimming we’ll be doing the grocery shopping and hopefully picking up some nice prawns to make the Honey Lime Prawns with brown rice & veg.
Tuesday will be a quiet day at home (most likely cleaning) and then Baby Mac’s Spanish Chorizo Chicken with rocquette & parmesan salad.
Wednesday I have an event to go to during the day and my sister will be babysitting Lily. I then have my night at the Buddhist Centre and Grandma & Grandad will be coming to look after Lily so we’ll head down to the bowling club for some good old-fashioned Chinese.
Thursday I have another event but this time Mr Monkey will have the day off so we don’t need to organise a babysitter. Depending on the cost of pork belly on Monday we’ll hopefully try a Sticky Pork Belly & Chat Potato recipe from SBS Feast Mag Issue 18 Feb-Mar 2013.
Friday Lily has school so I have been trying to plan meals that include some of Lily’s favourite dishes – sausages are definitely one of those. We have a packet of one of those Pasta Alfredo side dishes in the cupboard so for ease I’ll be using that to go with the sausages.
I’ve tried the Smoky Leek Risotto before and from what I can remember it was really good. We haven’t had risotto in a while and it’s also one of Lily’s favourite meals so it should go down well.
Sunday we have a birthday party for one of the Mums Group babies (I actually remembered this one). It’s a lunch time thing but I’ve only planned toasted sandwiches as I’m sure neither Mr Monkey & I will feel like cooking and Lily is likely to be tired. We might even get takeaway if we’re not up to making sandwiches!
