♥ Sunday – Dinner at Grandma & Grandad’s
Meal plan is a little late this week because Lily and I came down sick yesterday. Thankfully it seems to have passed quickly and we are both just a bit tired.
Lily had swimming this morning and then I put together this meal plan before we headed down to the shops to do the grocery shopping. Then we all had a big nap in the afternoon – a much needed nap! I cooked the steak with mash and veggies while Mr Monkey cut up the rock melon we got in this week’s delivery from Andy & Ted’s. We put together a quick fruit salad after dinner with the rock melon and yellow peaches, mango and kiwi fruit.
Tomorrow will be a day of cleaning and errands and then I’ll be making an old favourite for dinner – Giovanni’s Sausages with Potatoes & Rosemary. I love how easy this meal is (just chuck everything in a roasting pan!) and being sausages Lily is almost guaranteed to eat it.
Actually this week is fairly quiet in terms of plans – I’m hoping to get some cleaning done. Wednesday night will be a simple pan fried chicken breast with packet pasta alfredo and vegetables.
We still have some green prawns and scallops in the freezer so will make a risotto on Thursday night. Lily gobbled up the prawn risotto last week and kept getting the leftovers out of the fridge the next morning so I think it may be a new favourite.
Friday I have an event to attend and I wanted an easy meal to cook that night. I remembered that I had this recipe for Matt Preston’s Mac & Cheese pinned on Pinterest and as I loooove Mac & Cheese I thought it would be a good, easy meal.
Saturday we get our next fruit and vegetable delivery so I thought I’d leave our “vegetarian” meal until then (I realise the Mac & Cheese is technically vego but I mean one that actually has veggies in it!) – just a simple vegetable frittata.
Sunday we are hopefully going shopping for our Christmas Tree and then out the in-law’s house for dinner.
