Bit of a short meal plan this week. My parents are going away for a few days and I’m needed to babysit my niece so I’m heading down to their house for a few days. Mum has already organised the meals for those few nights which is why I know what we’re having.
Back home on Thursday and I’ve planned some Vegetarian Nachos for something a little different. I actually haven’t had any Mexican food in quite a long time so am looking forward to it.
On Friday I have an event to attend during the day and know I’ll be exhausted by the end so have just planned to use up some of the leftovers in our freezer.
I had planned the Pasta alfredo for last week but plans were changed and we ended up at the in-law’s house so I’ve moved it over to this week.
Sunday is Fathers Day and we’re going out to lunch with Mr Monkey’s family. My Dad works Fathers Day so we’ll probably celebrate with him on Monday. I know we won’t feel like cooking so have planned takeaway or perhaps just toasted sandwiches.
So, as I said, only a short one this week.
