Quiet week at home this week, hopefully. Lily is spending 2 nights at Grandma & Grandad’s house on Monday/Tuesday nights so we’ll only have Chloe at home for 3 days. I’ve finally finished the second task of my first assignment so I will starting on the third and last task this week. I’m hoping to finish it and get straight on to the next unit.
So, yes, for anyone that may be interested the study isn’t going along that great. I started out really well – reading through, and understanding the topic was much easier than I expected and I finished that a lot quicker than I had planned. However, the assignment has taken me a LOT longer than I expected. It is three tasks – a 1,500 word report, a 3,000 word report and a 1,500 word presentation plan. So while it is all submitted as one assignment it really should be 3. Life got in the way a lot and with my anxiety issues it just wasn’t getting done. I feel much better now (although still not 100%) and am starting to really work my way through things. Hopefully I can finally get this finished, move on to the next topic and keep on track through the rest.
Meals this week are mostly from websites that I had pinned, or left open in my browser, and have been meaning to try for awhile. I thought we could try something different on the nights when Lily isn’t home but I ended up doing some fairly “safe” meals. The Japanese udon soup is a little different – this is mostly for Mr Monkey who loves udon but I’ve never really liked it. I’m not a fan of soup and have always been put off the flavour of Japanese soups. But I’m trying to push myself at the moment so I thought I’d give it a go.

I roll FMS’s Chinese Chicken regularly now, and top it with a variety of veges (broccoli, carrot, big fat mushy’s) chucked on top of the pot 10 mins into cooking. So delicious and so easy.
