A bit of a mixed bag of recipes this week, just like my feelings at the moment!
We’ve all been sick in some way over the last few weeks/months. Lily’s had a cold/cough for about 3 months. She finally seems to be getting over it. I got tonsillitis and then a bad cough. Mr Monkey got the bad cough after me and had to take a day off work (unheard of!). Chloe has been pretty lucky and has only had a bit of a runny nose, on and off.
My parents have been sick too and I think we’re all just over it! But we’re only in the first month of winter here so I’m sure it’s just going to get worse.
Because I’ve been sick the housework hasn’t been getting done. Which means I start to feel overwhelmed. Which means my anxiety starts to take control again. It’s been tough. I also haven’t run in a week, which I think is contributing to my yuckiness. But then I’m anxious to run again after the terrible time I had last week!
This week is fairly quiet. Dinner at the in-law’s tomorrow night after swimming lessons in the morning. We bought a big leg of pork a few weeks ago so I’ll be cooking up a good proper roast dinner on Tuesday and using the leftovers for fajitas on Wednesday.
Lily’s at school Thursday and my Mum will hopefully be staying the night. I’m really looking forward to that salmon! Mum will then be picking Lily up from school on Friday and taking her down to their house for the weekend. It’ll just be me and Chloe for dinner so I’ll be having Pea and Ham Soup from the freezer.
Just us again on Saturday and I know I won’t feel like cooking so just eggs on toast for the two of us. Mr Monkey is off on Sunday and I’m hoping to get in and get some decluttering done. I think I’m mostly looking forward to the potato bake that night! Yum!
