♥ Sunday – Pesto Chicken Pasta Bake
We’re still at my parents – we were able to rearrange Lily’s swimming lesson this week and Mr Monkey has to work Monday and Tuesday which he normally has off. So a good chance to spend an extra few days, having a bit of a break and spending time with my family.
We’ll be heading back home on Tuesday. I have some mince in the freezer which has already been browned off. Crushed tomatoes and spaghetti in the pantry. We’ve had Spag Bol once a week for the last few weeks but it’s the easiest meal I can pull together when we get home late.
The rest of the week is straightforward – groceries on Wednesday, Lily’s school on Thursday and Friday. Otherwise, just at home, probably cleaning. Very boring!
I was having a hard time coming up with the meals for the rest of the week. Mostly because I was tired. And lazy.
So, I checked out Pinterest and came up with a few random ideas.
We’ve had chorizo fried rice before. I’m a little obsessed with chorizo at the moment and the girls love fried rice.
Going back to an old staple with the curried sausages. But it’s a favourite and it’s easy.
Decided to try something new with the pizzas. The recipe I’ve linked to is a 2 ingredient pizza dough – flour and greek yoghurt. Should be simple and fun. Not sure what we’ll put on the pizzas but I’m sure Lily will end up with ham and pineapple.
The Quinoa Enchilada Casserole popped up in my Pinterest feed and definitely caught my attention. I love enchiladas and am always trying to find ways to use quinoa. I’m really hoping it works out!
Randomly came across a picture of a pesto meal which made me think of pesto chicken pasta and I’ll have a try at a pasta bake.
Not a particularly interesting week!
