On Monday we will be spending the day in Brisbane before flying home in the afternoon. I know neither of us will feel like cooking so I’ve scheduled takeaway. We’ll probably get Thai from the place around the corner.
Tuesday through Thursday will be spent at home, hopefully working on the housework. So we have a new recipe on Tuesday night of Avocado Chicken Parmigiana which I’m really looking forward to. Wednesday night will be some simple beef burgers and Thursday will be an easy dinner of sausages, mash and veggies.
Friday Mr Monkey should be home for dinner and I’ve planned Gnocchi with sage brown butter and rocket. I’m sure Mr Monkey will tell me that I should be making the gnocchi from scratch but… Well, in my Year 11 Hospitality class we had to cook gnocchi and let’s just say… it was terrible. Since then I haven’t even been able to eat gnocchi at all. So, I thought I would least try the store bought stuff before having another go of making my own.
Saturday Mr Monkey should also be home for dinner and we’re going to have vegetable and chickpea fritters. We’ve had these before and they are fantastic. Easy but tasty. They even inspired Mr Monkey for one of his vegetarian specials at work. I’m not sure what we’ll serve with them, maybe we’ll just make these in to burgers too.
Sunday is Mr Monkey’s full day off work so we’ll probably just be relaxing around the house, perhaps going to the park for a play on the playground. We might pick up some nice fish during the day or we’ll just use the frozen fish fillets that we normally keep in the freezer.
I’m also hoping to make these biscuits with Lily. We have a few fun cookie cutters & I haven’t made biscuits before like this so it should be fun.

Monday – Takeaway

Wednesday – Sausages, Mash & Veggies
Thursday – Burgers

Baking – biscuits
