No photo of our plan for this week unfortunately; we’re having dinner at my in-laws house as I put this together. We had a fun weekend – Saturday night we had a family party, held at a hot rod club’s clubhouse. Was very different but lots of fun. There was a band playing old rock ‘n’ roll songs and Lily was completely transfixed by them. She spent the whole time staring at them and wanting to be as close as possible. We then stayed the night at my in-laws and Sunday was spent relaxing around the house with my family and theirs.

So Monday, we have Lily’s swimming lesson in the morning as usual and then a busy afternoon – Mr Monkey needs to renew his licence, I’m hoping to put our new Ikea hooks up in the entranceway and I would like to go for a run if we have the time. I have some beef mince in the freezer so thought I’d give this Family Mince Pie recipe a go.

Tuesday Mr Monkey is back at work but should be home for dinner. As always we have a lot of sausages in the freezer so I’ll make a easy sausage risotto (Lily’s favourite).

Wednesday night is going to be fun! My friend Amy is coming around to have a girly night of eating pizza, watching Harry Potter movies and eating ice cream. Can’t wait!

Thursday I’ve decided to do a meal we’ve done before – Macadamia Crusted Barramundi. We actually have some of the crumb left in the fridge.

Friday and Saturday should be spent doing housework so I’ve planned easy meals of Veggie Stir Fry and Chicken Schnitzel & Mash.

Sunday I’ve just planned takeaway as we are going out to lunch for Mr Monkey’s brother’s birthday.

Here’s the meal plan:

Monday – Family Mince Pie
Tuesday – Sausage Risotto
Wednesday – Pizza night
Thursday – Macadamia Crusted Barramundi
Friday – Veggie Stir Fry
Saturday – Chicken Schnitzel & Mash
Sunday – Takeaway

    I sat down and wrote a four week rotating meal plan! I got Mr Coaster to write down his favourite things to eat, and between the two of us I had enough summery meal ideas to rotate through. Once the weather starts to cool down again next April or so, I will write another four weeks of meals, but wintery ones :)

    It also meant I could plan for vegetarian and fish dishes, like you like to :) I’m not a huge fan of fish, so they’re all just tuna recipes, haha.

    I allowed for take out once a fortnight, as that’s what Mr Coaster thinks we can afford, so the major thing will be sticking to that and actually cooking at home all the time.

    And I even allowed for weekend brunches so that we eat properly on those days, too, instead of being lazy and snacking all the time.

      That sounds like a fantastic idea!!! I wish we could do that but we sometimes struggle to stick to the one week plan! :)

      Let me know how it goes! (Have you also thought about cooking up some of the meals in advance and freezing them?)

        We struggle to stick to it, too, but I’m really hopeful that we can quit the take out habit and stop being lazy with such a nice list of meals ahead of us ^_^
