Today we had Lily’s swimming lesson and my Dad caught the train up and took Lily for her lesson. We then went to the café for lunch and then to the park for quick play before he headed home. I think I wore them both out as they collapsed when we got back to our house!! I’ve pulled some sausages out of the freezer and plan to make a risotto for dinner as I know Lily will eat it for sure – she loves both sausages and risotto.
Tomorrow we have an appointment for Lily in the morning at a Opthamologist – we’ve noticed that she seems to have a bit of a lazy eye; when she stares off in to the distance one eye doesn’t seem to look in the same direction as the other. We’re not too worried about it but thought it might be best to get it looked at now while she’s younger. My parents are coming up to take us to the appointment and while I have planned dinner I’m not sure if we might just end up going to the local pub for dinner.
Wednesday is a nice boring day at home so I’ve decide to do a slow cooker meal. I had planned to do this last week but the week got changed around Mr Monkey did his Pork Knuckle dish on the night we were supposed to have it.
Thursday is an easy meal as we have Mums Group until late. Another meal that I know Lily will love, she loves pasta.
Will hopefully do the groceries on Friday so will pick up the things we need for the rest of the week. Up until now I will have used just what was in the freezer/ cupboard. Plan to just do a quick and easy beef stir fry.
Saturday I will be experimenting with a pork mince and chickpea pasta. Sorry no recipe, I’m just going to chuck it all together.
Sunday, Mr Monkey will hopefully be home (he’s had to work extra hours this week as his Sous Chef is having an operation) and I thought Quesadillas might be a fun dinner.
So here’s the meal plan:
Monday – Sausages risotto
Tuesday – Lentil Bolognese
Wednesday – Slow Cooker Honey Ginger Chicken Thighs
Thursday – Tuna pasta and veggies
Friday – Beef Stir Fry
Saturday – Pork mince and chickpea pasta
Sunday – Quesadillas
