Interesting week this week. Monday is just the usual with Lily’s swimming lesson in the morning and perhaps some Christmas shopping in the afternoon. I plan to just use some sausages in the freezer to make a Sausage Risotto.
Tuesday will be spent at home doing housework. We have some frozen fish pieces in the freezer so will just grill some with veggies and cous cous.
Wednesday I will be going to the Nudiversity Workshop and my in-laws are coming to babysit Lily. I’m not sure yet what we will do for dinner – perhaps go to the pub for a quick dinner before I leave.
Thursday I will be heading back down to my parents’ house – they are going to a concert with my sister and I’m babysitting my niece, with my brother. We’ll probably organise some leftovers or have pizza for dinner.
Friday I will be heading home and I’ve planned some Black Bean and Corn Quesadillas for dinner. I’ve fallen in love with Quesadillas lately. So good!
Saturday Mr Monkey should be home for dinner and I’ve planned this Mac & Cheese with Roasted Chicken & Goat Cheese recipe. I’m a big fan of Mac & Cheese but Mr Monkey isn’t really. I’m hoping this recipe may change his mind.
Sunday we have a picnic in the park for one of the Mums Group baby’s 2nd birthday. Boy that’s come up quick! We’re also using it as a chance to have a bit of a Christmas get together with all the mums. I’ve planned takeaway for that night as we will probably just grab something on the way home from the park.
