On the left you can see what we have planned for the week; once again a quiet week. I’m hoping to be motivated and get a lot of housework done. I didn’t do much in last week’s zone so I’m hoping to finish this week’s zone (downstairs) and finish off last weeks as well. Big plans and they probably won’t happen but I’m going to try my best.
Today we had Lily’s swimming lesson and my parents drove up to watch. We then went to lunch at the Beach Palace Hotel at Coogee and had a major cooked seafood platter between all of us. It was huge! So only a small meal of leftovers and 2-min noodles for us tonight.
Tuesday we will be heading to the library to return a few books and hopefully get something new to read. We have a heap of sausages in the freezer so I plan to just grill some and do a pesto pea & potato mash with the leftover pesto from last week.
Traci from Sparkle Says recommended her “Burger in a Bowl” dish. She says:
I buy Sanitarium vege burger patties then combine one of them in a bowl with salad and an egg. I can enjoy the burger deliciousness without the evil carbs!
It sounded great so I thought I would give it a go this Wednesday (probably just with beef or lamb mince). Mr Monkey (chef extraordinaire) laughed with I told him about it. “You do realise that’s just a beef salad!” Sigh. Men! They just don’t get it do they? It tastes like a burger without the bread so you tell yourself it’s a burger and you believe it. Simple. I really don’t get how he can’t understand this.
Thursday Mr Monkey should be off work and I thought I’d have a go at a Quiche Lorraine. I’ve made quiches before but don’t normally put bacon in and they are normally more frittatas because I have trouble with the pastry. But I am determined to do it properly this time.
We cooked a Macadamia Crusted Barramundi on Sunday which turned out beautifully but we had a lot of the crumb left. I added fresh parsley and dill plus a bit of lemon zest and it was super yummy. I’ve decided to try crumbing some chicken breast with it this week and seeing how that goes.
I have to remember to include a fish meal each week and this week I noticed this recipe for Fish & Vegetable Parcels on Fat Mum Slim’s website. Looks yummy and super healthy and I’m really looking forward to this. Lily ate lots of fish last Sunday so I’m hoping it is something she will continue to enjoy.
Sunday Mr Monkey will have the whole day off work so I thought we’d do something simple and quick and make a Beef Stir Fry.
