Bit late getting this up this week – we were at Mr Monkey’s parent’s house yesterday and then drove down to my parent’s house this afternoon. We’re down here for a few days and then will head back home on Wednesday.
The weather has finally cleared up. Of course, that happens when I’m not home and therefore not able to get through the loads and loads of dirty washing we have piling up. But it’s supposed to last for the rest of the week at least so hopefully I’ll be able to get through it.
Starting my course today. I’ve set myself deadlines for getting each topic in each subject done and then the assignments done. I think I’ve been fairly generous with these deadlines (and given myself weekends off) so I should be able to complete each subject fairly quickly. I’m feeling quite apprehensive still but will just have to be strict with myself and make sure I complete what I need to.
A few dinners have come over from last week’s meal plan – one night we went out to Mr Monkey’s parent’s house for dinner and on the other neither Mr Monkey or I felt like cooking so we ordered Thai in instead. Didn’t feel too bad about that as it’s actually been a few months since we did that.
I have collected a few cooking magazines over the past month or so but haven’t used the recipes so I made sure to use a few this week – Linguine with Basil Pesto, Potatoes & Beans and Bolognaise Pie. The pie looks interesting – they describe it as a cross between a meat pie, spag bol and lasagne. It looks a bit involved but as I have planned it for Sunday we should be home all day (and Mr Monkey too) so it shouldn’t be too hard to do. If it turns out well I might even blog it soon!
