Meal Plan:

♥ Monday – Dinner at Grandma’s
♥ Tuesday – Spag Bol
♥ Wednesday -Sausages, mash & Veg
♥ Thursday – Lasagna & Salad
♥ Friday – Hoisin Pork Stir Fry w/ noodles
♥ Saturday – Crumbed fish and chips
♥ Sunday – Chicken risotto

Yes, this post is really late. No real reason, I just kept putting it off. I am the queen of procrastination!

Fairly quiet week here this week. A very much needed quiet week. (Does that sentence even make sense??)

We had Lily’s swimming lesson yesterday then I went for a run while Mr Monkey got stuff organised at home. 26 minutes straight running! Good god it was hard, especially knowing that I had already done this plus more before I got tonsillitis. But it was so good to achieve it, especially as only a few weeks ago I wasn’t able to run 10 minutes straight again. Now, I just need to make sure I get out more than once a week!

After I had a shower and Mr Monkey had washed the dishes we went out to my in-laws’ house for dinner. Yummy slow cooked lamb and mash. Mmmm!

Today has been a slow one. Mr Monkey had the day off as well and got up early with the girls so I was able to have a sleep in. There’s been a bit of stress over the last few days as Mr Monkey has been trying to do his tax return – he started a new job a few months into the new financial year and the numbers from his old job aren’t adding up. Lots of phone calls, lots of stress, and we still haven’t got it sorted. Argh!

There’s some mince in the freezer so will make spag bol for dinner. Grocery shopping tomorrow – money is tight so we have to get it rather budget. Which tends to mean rather boring, especially as I just didn’t have the energy to get too creative this week.

I’m not going to make the lasagna – I’ve been craving it for ages but just don’t have the energy or the willpower to make it. I know that goes against the need to be frugal thing but I do know that Woolies sell them fairly cheap. Plus I love the ones you buy that are full of cheese and pasta :)

Probably the most creative I’m being this week is the Hoisin Pork Stir Fry with noodles. But it won’t be anything spectacular – just mince pork, a bottle of hoisin sauce we have in the cupboard, whatever veggies we have in the fridge and some ramen noodles.
